Our wonderful receptionist Estelle has shared her recipe for ratatouille with us. As Estelle is French and has her own recipe for cooking this dish, it could not be more authentic!
The standard ingredients are of course onions, aubergines, courgettes, tomatoes, garlic, peppers and olive oil. Over the years we’ve seen so many variations, some with herbs, some with spices and some even having a bit of both. Then there are different ways to prepare the dish.
Some cookery writers like to sauté the ingredients together and let them cook gently on the hob while others recommend an initial softening of the vegetables in a casserole dish before transferring them into the oven for a slow bake. Estelle’s recipe is all done on the stovetop.
Not only are we very grateful to her for sharing her authentic French version of ratatouille with our patients, we are super happy to have a colourful vegetarian dish which is perfect for anyone who is just in braces.
Estelle’s warming ratatouille
Ingredients
- 4 – 5 tablespoons of olive oil
- 1 onion
- 2 or 3 garlic gloves
- 2 peppers
- 3 courgettes
- 2 aubergines
- 6 fresh tomatoes
- Chillies (optional but I like it a bit spicy!)
- Mixed herbs
- Salt and pepper
Method
The key to making the perfect ratatouille is to cook the ingredients separately.
First, I sauté the onions, garlic and pepper together in some olive oil. Once they’re done, I cook the aubergines and courgettes one after the other, also in some olive oil.
When all of the vegetables are done, I mix it all up, add the tomatoes and cook until soft.
